SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. The aromatic vegetable raw material envisaged by the method versions is extracted by liquid nitrogen with corresponding miscella separation. Scorzonera, rosehips, apples and pears are cut, dried in microwave field at preset process parametres. Scorzonera and barley grains are fried; the rosehips, apples and pears are additionally dried by convective method. Scorzonera, barley grains, rosehips, apples and pears are mixed; the separated miscella is impregnated with the produced mixture with simultaneous pressure boost. Pressure is reduced down to atmospheric value with simultaneous freezing of mix and its cryo-grinding in the medium of released nitrogen.
EFFECT: methods make it possible to produce new flavoured coffee drink from non-traditional raw materials, and also provide for improvement of organoleptic properties of drink due to its enrichment with extractive substances of miscella and their preservation.
