SUBSTANCE: invention relates to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components, extracting mandarin zest using liquid nitrogen with correspondent miscella separation, cutting girasol, its drying in a microwave field at given process parametres and roasting, cutting acorns, their drying in a microwave field at given process parametres and their convective post-drying, mixing up the girasol with the acorns, impregnating the obtained mixture with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: method enables to obtain a new flavoured coffee drink and to avoid generating waste.
