SUBSTANCE: invention relates to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components, extracting tangerine zest using liquid nitrogen with correspondent miscella separation, cutting girasol, drying in a microwave field at given process parametres and roasting thereof, cutting barley grains, oat grains, acorns and nut kernels, drying in a microwave field at given process parametres and convective post-drying thereof, mixing up the girasol with the barley grains, oat grains, acorns and nut kernels, impregnating the obtained mixture with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: method enables to obtain instant powder for making a flavoured coffee drink using a waste-free technology.
