SUBSTANCE: invention refers to process of production of coffee substitutes. According to the procedure recipe components are prepared and basil is extracted with liquid nitrogen with separation of corresponding miscella. Further, yacon is cut, dried in SHF field at specified parametres of the process and roasted; also there are roasted grain of barley and oats, acorns and nut kernels. Yacon, grain of barley and oats and acorns and nut kernels are mixed. Produced mixture is soaked with separated miscella at simultaneous pressure built-up. Further pressure is dropped to atmospheric; mixture is simultaneously frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
