SUBSTANCE: invention relates to a technology of production of substitutes for coffee. The method includes preparation of prescription components, extraction of cinnamon with liquid nitrogen with separation of the relevant miscella, cutting yacon, its drying it in microwave oven to a residual moisture of about 20% at the power of the microwave field providing heating the yacon up to the temperature inside the bits of 80-90°C during not less than 1 hour, and its frying, frying grains of barley, oats, acorns and kernels, mixing of yacon, grains of barley, oats, acorns, and kernels in the ratio 3:7:3:4:3 by mass, soaking the obtained mixture with separated miscella with a simultaneous increase in pressure, release of pressure up to atmospheric with simultaneous freezing the mixture and its cryomilling in medium of the evolved nitrogen.
EFFECT: method enables to obtain new flavoured coffee drink from non-traditional raw materials using non-waste technology.
