FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparing recipe components, in extracting Chinese magnolia vine with liquid nitrogen and in separating corresponding miscella. Further girasol/sunflower is cut, dried in SHF field at specified parametres of the process and roasted. Also grain of barley and oats, acorns and nut kernels are roasted. Girasol/sunflower, grain of barley and oats, acorns and nut kernels are mixed. Produced mixture is soaked with separated miscella; simultaneously pressure is built-up then dropped to atmospheric; at the same time mixture is frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
