FIELD: food industry.
SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. Methods provide for preparation of recipe components, extraction of the aromatic vegetal raw material as per the method version by liquid nitrogen with corresponding miscella separation, dandelion roots cutting, drying in microwave field at preset process parametres and frying, barley grain, chestnuts and soya frying, mixing of dandelion roots and barley grains, oat grains, acorns and nut kernels, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost to the value of corresponding vapour enrichment pressure at the temperature of impregnation and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: methods make it possible to produce new flavoured coffee drink with improved organoleptic properties by means of its enrichment with extractive substances of miscella and their preservation.
