FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparing recipe components, in extracting red tea with liquid nitrogen and in separating corresponding miscella. Additionally the procedure consists in drying yacon in SHF field at specified parametres of the process, in roasting yacon, grain of barley and oats, acorns and nut kernels, and in mixing yacon, grain of barley and oats, acorns and nut kernels. Further produced mixture is soaked with separated miscella at simultaneous pressure rise, upon which pressure is dropped to atmospheric; mixture is simultaneously frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
