FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparation of recipe components, in extracting dill seeds with liquid nitrogen and separation of corresponding miscella, in cutting, drying yacon in SHF field at specified parametres of process and in roasting it, in roasting grain of barley and oats, acorns and nut kernels. Additionally, the procedure consists in mixing yacon, grain of barley and oats, acorns and nut kernels. Further produced mixture is soaked with separated miscella at simultaneous pressure rise, upon which pressure is dropped to atmospheric; mixture is simultaneously frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
