FIELD: chemistry.
SUBSTANCE: invention relates to the technology of preparing an inulin-containing solution for food or medical purposes. The method involves washing and grinding girasol/sunflower, adding acid water, electrocontact heating, extraction at ratio of phases equal to 1:1, pH 5-6.5 for 30-40 minutes, concentration of the extract through reverse osmosis, photosterilisation and packing in aseptic conditions.
EFFECT: method enables reduction of chromaticity of the end product at relatively high conversion of inulin to the end product, as well as reduction of energy consumption and ensure shelf life of the end product of not less than 1 year without considerable change of its consumer and technological properties.
