FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe ingredients, extraction of lemon rind by liquid nitrogen with corresponding miscella separation. Then yacon is cut, dried in the microwave field at preset process parametres and roasted, barley grain is roasted as well as chestnuts and soya. Then yacon is mixed with barley grain, chestnuts and soya. Then the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and pressure releases until the pressure equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: method enables to obtain flavoured coffee drink instant powder out of unconventional raw material according to nonwaste technology.
