SUBSTANCE: invention is related to coffee substitutes production technology and represents manufacturing method of instant powder for flavoured coffee drink. Recipe components are prepared. Orange peels are extracted by liquid nitrogen with corresponding miscella separation. Girasol is cut, dried in microwave field at preset process parametres and roasted. Barley, oat and rye grains are fried. Girasol is mixed with barley grain, oats and rye grain, the obtained mixture is impregnated by separated miscella with simultaneous pressure boost. It is followed by depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method enables to produce new flavoured coffee drink with improved organoleptic properties owing to enrichment of the drink with extractive substances of miscella and preservation of them in the course of preparation.
