SUBSTANCE: invention relates to technology used to produce coffee substitutes. Formula components are prepared using traditional technology. Medang is extracted with liquid nitrogen to separate according miscella. Prepared yacon is cut and dried in microwave field at specified parametres of the process. Yacon and oats grain are fried according to traditional technology. Yacon and oats grain are mixed in the mass ratio of 7:3. Produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Produced mix is exposed to cryo-grinding in medium of released nitrogen.
EFFECT: invention makes it possible to improve organoleptic properties of drink and to produce flavoured coffee drink from non-traditional raw materials according to wasteless technology.
