FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparing recipe components, in extracting cinnamon laurel with liquid nitrogen and in separating corresponding miscella. Further girasol/sunflower is cut, dried in SHF field at specified parametres of process and roasted. Also grain of barley and oats and acorns and nut kernels are roasted. Girasol/sunflower, grain of barley and oats, acorns and nut kernels are mixed and soaked with separated miscella at simultaneous pressure rise. Further pressure is dropped to atmospheric; mixture is simultaneously frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
