FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to technology used to produce coffee substitutes. Method provides for preparation of formula components, extraction of nutmeg with liquid nitrogen to separate according miscella, yacon cutting, drying in microwave field at specified parametres of the process and frying, frying of barley malt. Further yacon and barley malt are mixed, produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one, simultaneously mix is frozen and cryo-ground in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
