SUBSTANCE: invention relates to technology used to produce coffee substitutes. Formula components are prepared using traditional technology. Almond blossom is extracted with liquid nitrogen as per traditional technology, and according miscella is separated. Prepared yacon is cut and dried in microwave field down to residual moisture of around 20% at specified parametres of the process. Yacon and rye grain are fried according to traditional technology. Yacon and rye grain are mixed in the mass ratio of 7:3, produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Produced mix is cryo-ground in medium of released nitrogen to produce target product.
EFFECT: invention makes it possible to improve organoleptic properties of drink and to produce flavoured coffee drink from non-traditional raw materials.
