SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for the following. Lemon rind is extracted with liquid nitrogen to separate according miscella. Yacon and apples are prepared as per traditional technology, cut and dried separately in microwave field down to residual moisture of around 20% at specified parametres of the process. Yacon is fried as per traditional technology, and apples are dried additionally by convective method down to residual moisture of around 5%. Yacon and apples are mixed in the mass ratio of 3:2, and produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Produced mix is cryo-ground in medium of released nitrogen to produce target product.
EFFECT: invention makes it possible to improve organoleptic properties of drink and to produce flavoured coffee drink from non-traditional raw materials according to wasteless technology.
