SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe components, extraction of tangerine rind by liquid nitrogen with corresponding miscella separation, cutting of yacon, drying it in microwave field at preset process parametres and roasting of yacon, drying rosehips, apples and pears in microwave field at preset process parametres and drying them up by convective method. Moreover, the method involves roasting barley grain and mixing yacon, rosehips, barley grain, apples and pears. Then the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and pressure releases until the pressure equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
