FIELD: food industry.
SUBSTANCE: invention relates to technology used to produce coffee substitutes. Formula components are prepared using traditional technology. Coriander is extracted with liquid nitrogen as per traditional technology, and according miscella is separated. Prepared yacon is cut. Cut yacon and tangerine pulp are separately dried in microwave field down to residual moisture of around 20% at specified parametres of the process. Yacon is fried as per traditional technology, and tangerine pulp is dried additionally by convective method down to residual moisture of around 5%. Yacon and tangerine pulp are mixed in the mass ratio of 7:3. Produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Produced mix is cryo-ground in medium of released nitrogen to produce target product.
EFFECT: invention makes it possible to improve organoleptic properties of drink and to produce flavoured coffee drink from non-traditional raw materials.
