FIELD: chemistry.
SUBSTANCE: invention relates to beer brewing technology. Method involves mixing Chinese magnolia and hop, extraction of the obtained mixture with liquid nitrogen with separation of the corresponding miscella. Chicory is cut and dried in a microwave field with given parametres of the process and roasted. The chicory is mixed with malt. The obtained mixture is impregnated with the separated miscella with simultaneous increase of pressure. Pressure is decreased to atmospheric pressure level with simultaneous freezing of the mixture. The mixture undergoes cryogenic grinding in the medium of released nitrogen, sugar is added and drinking water is poured and the mixture is saccharified to obtain wort. Brewing yeast is added and primary fermentation, after fermentation of the young beer and filtration are carried out.
EFFECT: invention shortens duration of the process and increases foam stability of the end product.
