FIELD: food industry.
SUBSTANCE: method includes air distribution by laying on longitudinal wall of the drying camera through narrow nozzles, with nozzles aspect ratio 1:20÷1:30 and arranged evenly along the channel, distance between axes is 1 m. Method provides air supply during drying of raw sun-dried sausages on racks through narrow nozzles downright with vertical streams, which laying on longitudinal wall of the camera between its wall and racks (forward flow supply). Thereafter streams enter downright to the product zone with reverse flow. Defrosted and moisturised air goes to the suction channel on the exit from product (on the racks) zone, then it goes to environmental unit for reprocessing with further entering into distribution channel with narrow nozzles.
EFFECT: reduced power consumption and preserved quality of the product.
