FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and may be used to produce cultured milk drink with premix on the basis of chitosan. Method includes pasteurisation of milk, cooling down to temperature of fermentation, addition of premix on the basis of chitosan, fermentation by means of yoghurt ferment addition, drink fermentation and pouring.
EFFECT: invention makes it possible to give preventive and functional properties to product and to increase its shelf life.
