SUBSTANCE: invention relates to dairy industry. method involves pasteurizing skimmed milk or reconstituted skimmed milk, cooling, measurement of the protein content in raw milk and, optionally, ultrafiltration or diafiltration to a protein content of 4.0–6.0 %. Prepare the mixture by entering into pasteurized skimmed milk, or pasteurized reconstituted skimmed milk, or by ultrafiltration or diafiltration of skimmed milk of milk protein concentrate, or sodium caseinate, or potassium caseinate, or whey protein concentrate, or whey protein microparticulate. Then make vitamin-mineral premix and prebiotic. Mixture is stirred until homogeneous and complete dissolution of the protein. Normalization of the mixture in fat spend cream until the fat content of 0.1–12 %, measure the protein content in the mixture. EFFECT: invention allows toincrease the nutritional and biological value of the product, improve its dietary properties, as well as preserve the consistency and taste of the product without changing them during storage.
