FIELD: food industry.
SUBSTANCE: invention relates to production of whipped desserts. Method for production consists in the fact that mixture is made, which comprises non-fat dry cow milk, sugar sand, water and gelatin or stabiliser-emulsifier. Components are mixed, produced mix is filtered at the temperature of 60-65°C through filters with cell size of 1-3 mm. Pasteurisation and homogenisation are carried out, mixture is cooled down to temperature of 20-30°C, avoiding visible increase of viscosity. Then it is supplied to freezer with thin-walled cylinder for saturation with air until whipped property reaches 60-90% and frozen down to temperature of minus 4-6°C and conditioned in quick-freezing chamber.
EFFECT: this invention makes it possible to produce product of improved quality due to formation of stable structure, increased resistance to melting and high shape stability.
