FIELD: food industry.
SUBSTANCE: invention relates to the field of the food industry, namely to the field of production of dry dessert for baby food. Blend fruit and berry puree with structurant. Water is added in an amount of 0.5 to 1.0 L per 1 kg of dry mixture and hydrothermal treatment of the resulting mixture is carried out before the gelatinization stage of the structurant. Resulting intermediate product is dried on a roller dryer or by sublimation. Resulting dry intermediate product is ground, mixed with sugar, taken in an amount of 45–55 % of the weight of the dry semifinished product. Vitamins are added in an amount up to 49 % of the recommended daily allowance.
EFFECT: invention makes it possible to obtain a dry dessert suitable for the rapid production of three vitaminized types of desserts for baby food: starch drinks, mousses, jellies.
