SUBSTANCE: invention relates to technology used to produce coffee substitutes. Formula components are prepared. Orange rind is extracted with liquid nitrogen to separate according miscella. Girasol-sunflower is cut, dried in microwave field at specified parametres of the process and fried. Apples are cut, dried in microwave field at specified parametres of the process and additionally dried by convective method. Black chokeberry is dried in microwave field at specified parametres of the process and additionally dried by convective method. Girasol-sunflower, apples and black chokeberry are mixed. Produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric value with simultaneous freezing of mix and its cryo-grinding in the medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials by means of its enrichment with extractive substances of miscella and their preservation.
