SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method comprises extracting caraway by liquid nitrogen with corresponding miscella separation, preparing, cutting, drying in microwave field at preset process parametres and frying girasol/sunflower, drying in microwave field at preset process parametres and drying grape refuses by convective method, mixing girasol/sunflower and grape refuses, impregnating obtained mixture by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to obtain new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
