FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of coriander by liquid nitrogen with corresponding miscella separation, girasol/sunflower preparation and cutting, its drying in microwave field till residual humidity about 20% at microwave field power providing warming of girasol/sunflowers inside the bits till temperature of 80-90°C during at least an hour. Hereafter grape refuses are dried in microwave oven till residual humidity about 20% at microwave filed power providing warming grape refuses inside the mass till temperature of 80-90°C during at least an hour and then dried till residual humidity about 5 % by convective method. Girasol/sunflower and grape refuses are mixed in mass ratio 3:2, obtained mixture is impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to obtain new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
