SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Basil is extracted by liquid nitrogen according to traditional technology. Girasol/sunflower is prepared according to traditional technology and cut. Cut girasol/sunflower and lemon refuses are dried separately in microwave field at preset process parametres till residual humidity about 20%. Girasol/sunflower is fried according to traditional technology, lemon refuses are dried by convective method till residual humidity about 5% Girasol/sunflower is mixed with lemon refuses in mass ratio 7:3, the obtained mixture is impregnated in the separated miscella with simultaneous pressure boost. The pressure is released until it equals the atmospheric pressure with simultaneous mixture freezing. Obtained mixture is cryomilled in medium of evolved nitrogen with production of the target product.
EFFECT: method allows to improve organoleptic properties of the drink and to produce flavoured coffee beverage out of unconventional raw material according to nonwaste technology.
