FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. The formulation ingredients are processed according to the traditional technology. Caraway is extracted by liquid nitrogen using traditional technology and miscella is separated. Prepared girasol-sunflower is cut. Cut girasol/sunflower and peach refuses dried separately in microwave field at preset parametres till residual humidity about 20%. Girasol/sunflower is fried according to a traditional technology, peach refuses are drying till residual humidity about 5 % by convective method. Girasol/sunflower is mixed with peach refuses in ratio according to weight 3:2, the obtained mix is impregnated in the separated miscella with simultaneous pressure boost. Pressure is decreased to atmospheric pressure level with simultaneous freezing of the mixture. Obtained mixture is cryomilled in medium of evolved nitrogen which finally yields the target finished product.
EFFECT: method allows to improve organoleptic properties of the beverage and to produce flavoured coffee beverage.
