SUBSTANCE: invention is related to food industry, namely to coffee substitutes production. Method provides for extraction of badian by liquid nitrogen with corresponding miscella separation, cutting, drying in microwave field at preset process parametres and frying girasol/sunflower, cutting, drying in microwave field at preset process parametres and convective completing of drying pomegranate peels, mixing girasol/sunflower and pomegranate skin, impregnation of obtained mixture by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: invention enables to obtain flavoured coffee drink instant powder out of unconventional raw material according to non-waste technology.
