FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and can be used for manufacturing dairy butter. Invention includes cream pasteurisation, cooling, maturing, warming till kneading temperature. The cream is kneaded till oil layer forming, bacterial concentrate which contains mixture of bifidus bacteria strains such as B.adolescentis MC-42, Bifidobacterium longum B 379 M, lactic acid bacillus such as L. plantarum in symbiosis with such cultures as Lactobacillus acidophilus and Streptococcus diacetilactis in ratio 1:1:1:0,10:0,15, linseed oil in amount of 1% from the mixture are added in the layer, mixed and cooled.
EFFECT: invention allows to obtain product with increased probiotic preventive and biological value, improved organoleptic, dietary and preventive properties.
