SUBSTANCE: method provides for mixing lemon-balm with hop and extracting obtained mixture by liquid nitrogen with corresponding miscella separation It is followed by cutting, drying in microwave field at preset process parametres and frying girasols/sunflower. Then mixing girasols/sunflower and malt, impregnating obtained mixture by separated miscella with simultaneous pressure boost, depressurisating to atmosphere pressure with simultaneous freezing mixture and cryo-mincing it in escaped nitrogen medium. It is followed by adding sugar, filling mixture with drinking water and saccharificating with obtaining wort, adding beer yeast in it, main fermentating, postfermenting and filtering.
EFFECT: reducing technological process duration and increasing end product foam stability.
