SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of anisetree with liquid nitrogen to separate according miscella. Girasol-sunflower is prepared, cut, dried in microwave field at specified parametres of process and fried. Lemon pulp is dried in microwave field at specified parametres of process and additionally dried by convection method. Girasol-sunflower and lemon pulp are mixed, separated miscella is impregnated with produced mix with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mixture. Finished mix is exposed to cryo-grinding in medium of released nitrogen.
EFFECT: invention makes it possible to produce new flavoured coffee drink from non-traditional raw materials, to improve organoleptic properties and their preservation.
