FIELD: food industry.
SUBSTANCE: invention relates to technology for complex processing of vegetables, namely chicory. Method of complex processing of chicory, involving washing chicory, milling it, filling with acidified water until the pH of the extraction mixture is 5-6.5 with a ratio of phases 1:1, electrical contact heating of the obtained mixture to a temperature of 55-65°C, extraction within 30-40 minutes, followed by separation of the extract and oil meal, consistent transmission of the extract through membranes with a threshold of retention 6-8 kDa and 0.8-2 kDa returning of low-molecular fraction to the stage of extraction, concentration of the remaining fractions by reverse osmosis to the solid contents of at least 15%, combination of the concentrate of high molecular weight fraction with the oil meal obtaining jelly concentrate, the remaining concentrate which is a purified from accompanying substances inulin-containing solution, it is photosterilised and packed in aseptic conditions.
EFFECT: method enables to implement complex processing of chicory with complete recycling of nutrient and bioactive substances.
