FIELD: food industry.
SUBSTANCE: invention relates to technology for complex processing of vegetables. Method provides for yacon washing, its grinding, pouring with acidified water, treatment in microwave field until native ferments are inactivated, extraction at the specified parametres of the process, serial passing of extract through membranes with retention threshold of 6-8 kDa and 0.8-2 kDa with return of low molecular fraction at the stage of extraction. Further remaining fractions are concentrated by reverse osmosis, concentrate of high molecular fraction is combined with extraction cake to produce gelling concentrate, remaining concentrate is photosterilised and packed under aseptic conditions to produce inulin-containing solution.
EFFECT: invention makes it possible to do complex treatment of yacon with production of gelling concentrate and inulin-containing solution as finished product with complete utilisation of nutritious and biologically active substances.
