FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, cutting of girasol/sunflower drying it in microwave field at preset process parametres, roasting and milling, roasting of barley, oat and rye grain, mixing of girasol/sunflower, barley, oat and rye grain in mass ratio 3:6:3:8, extraction of obtained mixture by drinking water and at preset process parametres, filtering of obtained extract, preparation of syrup based on it, packing of strawberries and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
