SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. Method involves preparation of the recipe ingredients, extraction of orange rind by liquid nitrogen with the separation of respective miscella. Yacon is cut, dried in the microwave field under the specified process parametres and roasted, barley grain and rye grain are roasted, yacon, barley grain and rye grain are mixed with the weight ratio 2:2:1. The obtained mixture is impregnated by the separated miscella with the simultaneous pressure increase and following reduction of pressure down to the atmospheric one along with simultaneous freezing of the mixture. The ready mixture is exposed to cryogrinding in the medium of released nitrogen.
EFFECT: improvement of the drink organoleptic properties due to its enrichment with extractive substance of miscella and their preservation.
