FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. Method includes preparation of formula components, yacon cutting, drying in microwave field at specified parametres of the process, frying and grinding, frying of barley, oat and rye grain, mixing of yacon, barley grain, oat grain and rye grain in mass ratio of 3:6:3:8, extraction of produced mixture with drinking water and at the specified parametres of the process, filtering produced extract, making syrup on its basis, packing of quinces and syrup, sealing and sterilisation.
EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked fruit in finished product without reduction in its shelf life.
