FIELD: food industry.
SUBSTANCE: invention relates to a technology for complex vegetables processing. The method includes washing and milling scorzonera, its treatment in a microwave field until inactivation of native enzymes, extraction with acid water at preset parameters of the process with further separation of extract and extraction cake, consistent passing of the extract through membrane with retention threshold of 6-8 kilodaltons and 0.8-2 kilodaltons with return of low-molecular fraction on extraction phase, concentration of the rest of the fractions through reverse osmosis, combining of concentrate of low-molecular fraction with extraction cake with gelatinising concentrate obtaining. The remaining concentrate represented by an inulin-containing solution free from related substances undergoes photosterilisation and packaging under aseptic conditions.
EFFECT: method makes it possible to provide for complex processing of scorzonera with full utilisation of nutritious and biologically active substances.
