FIELD: food industry.
SUBSTANCE: invention relates to technology for complex processing of vegetables. Method provides for yacon washing, its grinding, pouring with acidified water, electrocontact heating, extraction at the specified parametres of the process, serial passing of extract through membranes with retention threshold of 6-8 kDa and 0.8-2 kDa with return of low molecular fraction at the stage of extraction, concentration of remaining fractions with reverse osmosis. Further concentrate of high molecular fraction is combined with extraction cake to produce gelling concentrate, remaining concentrate is photosterilised and packed under aseptic conditions to produce inulin-containing solution.
EFFECT: method makes it possible to provide for complex processing of chicory with full utilisation of nutritious and biologically active substances.
