FIELD: food industry.

SUBSTANCE: invention relates to food industry and may be used in production of boiled sausages in casings. Method provides for preparation of raw materials, including cutting of beef and pork carcasses, their dissection, trimming, grinding, salting, soaking in salting, making minced meat in cutter in two stages, stuffing into casing, thermal treatment and cooling. At the same time in process of boiled sausage making, food sodium alginate is added in amount of 0.8-1.2% to total mass of meat raw materials, and components are taken in a certain ratio.

EFFECT: method provides for production of high-quality boiled sausage with specified chemical composition, having improved structural-mechanical and preventive properties.
