FIELD: food industry.
SUBSTANCE: group of inventions relates to technology for production of flour confectionery products. The methods include preparation of recipe components. Chicory is cut, dried in microwave field at preset process parametres, additionally dried by convective method and cryo-ground in liquid nitrogen to produce flour. Dough making from high-grade wheat flour, chicory flour produced according to specified technology, yolks, salt, soda, vegetable oil, phospholipides and water. The dough is moulded in the form of sheets and baked; girasol or girasol-sunflower or yacon or chicory is cut, dried in microwave field at specified parametres of process. It is fried and cryo-ground in medium of liquid nitrogen to produce flour. The flour is mixed with culinary fat, dry milk, sugar powder and waffle crumb to make filling. Waffles are shaped from sheets and filling.
EFFECT: produced waffles have improved texture, coffee taste and flavour with no coffee added to the formula.
