FIELD: food industry.
SUBSTANCE: invention relates to technology for production of preserved compotes. Method provides for preparation of formula components, dandelion root cutting, drying in microwave field at the specified parametres of the process, frying and grinding of dandelion root, frying and grinding of chestnuts, frying of barley and soya beans, mixing of dandelion root, barley, chestnuts and soya bean, extraction of produced mix with drinking water and filtration of produced extract at the specified parametres of the process, filtration of produced extract, making syrup on its basis, packaging of cherries and syrup, sealing and sterilisation.
EFFECT: method makes it possible to produce compote with coffee tinges of taste and flavour with no coffee in the formula, to simplify technology and to reduce content of boiled soft fruits in finished product without no reduction in its shelf life.
