FIELD: food industry.
SUBSTANCE: group of inventions relates to technology of production of diet flour confectionary for feeding of patients with sugar diabetes. Methods include preparation of composition components, cutting of chicory, its drying in SHF field at specified process parametres, after drying with convective method and cryogrinding in liquid nitrogen obtaining flour, preparation of dough from wheat flour of superior quality, obtained by described technology flour from chicory, yolks, salt, soda, vegetable oil, phospholipids and water, its formation in form of sheets and baking, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in SHF field at specified process parametres, roasting, and cryogrinding in medium of released nitrogen obtaining flour, mixing it with cookery fat, dry milk, sweetener "Sladex" and wafer crumbs obtaining filling and formation of wafers from sheets and filling.
EFFECT: obtained diabetic wafers have improved consistence and coffee taste and flavour without having coffee in composition.
