FIELD: food industry.
SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. The methods envisage preparation of the recipe components, extraction of the vegetable raw material envisaged by the method versions with liquid nitrogen with separation of the corresponding miscella, cutting oyster plant, drying oyster plant and peach refuses in microwave field at specified parametres of the process, frying oyster plant, additional drying of peach refuses by convective method, mixing oyster plant and peach refuses. The obtained mixture is impregnated by the separated miscella with simultaneous pressure boost and depressurisation to atmospheric pressure with simultaneous freezing of the mixture and its cryomilling in the medium of nitrogen released.
EFFECT: methods allow to produce new flavoured coffee beverage according to a nonwaste technology.
