FIELD: food industry.
SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. The method provides for preparation of the recipe components, extraction of the flavoured vegetable raw material envisaged by the method versions with liquid nitrogen with the corresponding miscella separation, scorzonera cutting, drying in microwave field at preset process parametres and frying, barley grains, chestnuts and soya frying, mixing scorzonera, barley grains, chestnuts and soya. Then the obtained mixture is impregnated by the separated miscella with simultaneous pressure boost and depressurisation to atmospheric pressure with simultaneous freezing of the mixture and its cryomilling in the medium of nitrogen released.
EFFECT: methods allow to produce new flavoured coffee beverage according to a nonwaste technology.
