FIELD: food industry.

SUBSTANCE: invention relates to technology of canned compotes manufacturing. A method for production of peach compote is proposed. Recipe components are prepared. Dandelion roots are cut, dried in microwave field at preset process parametres, roasted and milled. Acorns and nut kernels are roasted and milled. Barley and oat grains are roasted. Dandelion roots, barley and oat grains, nut kernels are mixed in a weight ratio of 3:7:3:4:3. The produced mixture is extracted with drinking water, phases ratio being 1:(6-7), with periodic drop of extraction mixture pressure till water boils. The produced extract is separated and filtered. One prepares syrup on its basis containing dry substances in an amount of 22.5-32%. Peach and syrup are packaged, vacuum-sealed and sterilised.

EFFECT: invention allows to produce compote with coffee flavour and aroma tones with no coffee content, reduce content of boiled fruits in the end product and extend the product's storage life.
