FIELD: food industry.

SUBSTANCE: coffee product produced of fried and milled coffee beans contains lower levels of lactons of chlorogenic acids relatively to levels of chlorogenic acids in coffee. The product may be prepared by way of coffee extract treatment with a ferment for hydrolysis of at least part of lactons of chlorogenic acids present in the extract. Alternatively or additionally, it may be provided for by way of contacting coffee extract with a sorbent or dissolving agent which is suitable for non-polar components removal and at least partly saturated with chlorogenic acids.

EFFECT: product has a reduced degree of bitterness.
