FIELD: food industry.

SUBSTANCE: coffee granules are placed into containers for granules, in fact trapped by retaining element. Said coffee granules are fried ground coffee grains. Directed solvent for extraction from the first direction in a container for granules to extract coffee in a way so that the solvent returns via the layer of coffee granules. Said solvent is water. Extracting, from the first direction, coffee extract from container for granules, wherein at the stage of extraction water is added to the second direction opposite to the first one, or by using pump or similar device for suction from the first direction, or by inputting air or similar media from the second direction opposite to the first direction.

EFFECT: invention ensures production of a product with very good flavour, with preservation of aroma and rich taste and attenuation only intensely bitter taste of coffee, extract is transparent and has high preservation properties during storage.
